I know...I know, it's been quite a while since I've written a Weigh-in Wednesday post. What can I say? Summers are never my best times for organization and I just couldn't balance everything with the debut book launch and a pending deadline. Something had to give.
So I'm not weighing in until sometime later in September. I don't want to get discourage myself before I even get back into the routine. ;-)
So before I go back to being healthy, I'm going to share a delicious recipe. :-)
P.S. just give me until the middle of September to get organized. Fingers crossed.
White Chocolate Macadamia Cranberry Cookie (makes 2 dozen)
- 1/3 cup butter, softened
- ½ cup brown sugar
- 1/3 cup sugar
- 1 egg
- ½ tsp almond extract
- 1 tsp vanilla extract
- ½ tsp salt
- ½ tsp cinnamon
- ½ tsp baking soda
- 1 ½ cups flour
- ½ cup dried cranberries, chopped
- ½ cup white chocolate chips
- 1 cup macadamia nuts, chopped
Preheat oven to 375°.
Beat butter and both sugars together.
Add the egg, both extracts, salt cinnamon, and baking soda. Mix well.
Slowly mix in the flour. Mix well.
Hand stir in the cranberries, white chocolate and nuts.
Using a rounded tablespoon full of dough, place on tray.
Bake 10 minutes, until lightly browned.
