Recipe Roundup - Ham & Cheese with a Twist


As we head into the holiday season, there are so many places to go and things to do that I like to have an easy meal on hand. Plus, I don't like to cook on the weekends. After thinking up meals all week long, I'm tired so it's great when I can go to the freezer and pull out something yummy that will warm everyone's belly. ;-)

So I'm sharing a family favorite that was given to me by my wonderful mother-in-law. It's a very simple recipe and it freezes for future use. What could be better?

Ham & Cheese Sandwiches (with a twist)

  • 2 lbs deli ham
  • 1 lb sharp cheddar cheese (block-style)
  • 1/2 bell pepper
  • 1 medium onion
  • 24 green olives (pitted)
  • 15 oz tomato sauce
  • 24 semi-hard rolls

Grind all of the above ingredients (except the tomato sauce) into a large mixing bowl. Stir in the tomato sauce. Slice the rolls and spoon in the mixture, evenly distributing the mixture between all of the rolls.

Wrap the sandwiches in foil and bake at 350 degrees Fahrenheit for 20 minutes.

For the extra sandwiches, wrap them individually in foil. Place in a freeze Ziploc bag and freeze. When you go to eat them place on a cookie sheet back at 350 for 20 mins. Then open up the sandwiches and loosely close the foil back around the open sandwich and bake for another 20 mins.

Then serve with whatever side you prefer. In our house everyone has a different side which makes this a family pleaser.

And if you are wondering how this works into the Weight Watchers program, it comes in at 8 points which isn't so bad. ;-)
