Weigh-in Wednesday + Recipe Alert


Hi. I hope you had a good week and made progress with your fitness routine. Last week was a real toughie for me. Oh who am I kidding, it was a complete flop. My youngest graduated college so there were numerous dinners combined with Mother's Day weekend equals disaster.

With dinners out for a week, I started off trying to be real good. By the next night, it wasn't so good. By the third night, I gave up. As such I didn't weigh in this week. :-(

I suppose that's to be expected now and then. The good news is life is getting back on track and tomorrow I get back to my diet/exercise. I'm hoping it stays that way for a while.

This week I'm excited because Bliss, who regularly comments on Hearts & Scribbles sent me a new recipe to share:


4 eggs

1/2 cup fat-free skim milk

6 oz uncooked potato(es), saute first

1/4 medium uncooked, onion(s), saute first

4 oz ham, extra lean

1 cup finely shredded cheddar

2 1/2 cups frozen broccoli florets, thawed and trimmed

2 tsp all-purpose seasoning blend

Preheat oven to 350 degrees.

Saute diced potatoes and onions together. Thaw frozen broccoli  Mix together eggs, milk and seasoning. Grease pie pan. Add potatoes, onions and diced ham. Sprinkle with 3/4 of the cheese. Spread broccoli over the top (make sure broccoli is trimmed or diced if necessary). Pour egg mixture evenly over the ingredients and top with the remaining cheese.

Bake for 30-50 mins. Checking center until done.

It sounds delicious. I have this printed out and ready to try as soon as I make a trip to the grocery store. Thanks so much for sharing Bliss.
