Recipe Roundup: Pesto Tortellini Salad

This is an amazing salad that is an entire meal by itself. The family absolutely loves it at any time of the year. The nice part is it's fast and easy. I can get the veggies chopped in the amount of time it takes to boil the water for the pasta. So if you like to mix things up a little, I hope you'll give this salad a try.

Pesto Tortellini Salad

  • iceberg lettuce, chopped
  • cucumbers, diced
  • tomatoes, chopped
  • green pepper, chopped
  • scallions, chopped
  • fresh mushrooms, chunked
  • black olives, sliced
  • five-cheese tortellini
  • chicken breasts, cooked and shredded


  • 1/2 cup pesto sauce
  • 1/2 cup fat-free ranch
  • 1 cup buttermilk
  • salt & pepper to taste

Combine vegetables.

You'll notice I didn't include any quantities for the vegetables as it's all per your taste.

As for the dressing, I mix up a batch and let everyone take as much or as little as they want.

The chicken breast and tortellini are warmed before being added to the salad.
